The little, papery, round blossoms of globe amaranth are great for cutting and drying. The low, mounding varieties make a nice border edging.
Gomphrena globosa, which produces white, red, or purplish flowers in summer and fall, grows from 6 to 24 inches tall, depending on the variety.
Plant in full sun in spring, after any danger of frost. Set out transplants 6 to 12 inches apart or sow seeds directly in the ground. To dry the flowers, cut them when they’re fully mature and hang them upside down in a shady spot; they retain their shape and color through winter.
