Brown sugar contains half a percent of naturally occurring mineral salts, while Sucanat (a contraction of SUgar- CAne NATural) contains 3 percent mineral salts, including calcium, iron, magnesium, zinc, copper, and chromium. It has traces of B vitamins. It can be substituted for refined white sugar, or light or dark brown sugars, on a 1:1 basis.

White, Dark, and Confectioners’ Sugar. Whether refined or unrefiined, all sugar can be organic, meaning it comes from organically grown sugar cane and no synthetic chemicals are used in its processing. Even the popular Domino brand of sugar sells an organic version these days.
