Grapefruit Cooler

A very simple yet enormously refreshing drink. Use Marsh white grapefruit if you can find it.

SERVINGS

Serves 2

INGREDIENTS

4 mint sprigs, plus more for garnish

1 tablespoon superfine sugar

2/3 cup freshly squeezed white grapefruit juice

1 tablespoon freshly squeezed lime juice

3 ounces light rum

Chilled club soda

Dash Angostura bitters

White grapefruit segments for garnish

PREPARATION

In a cocktail shaker, crush the mint sprigs with the back of a tablespoon against the inside of the shaker. Add the sugar and fruit juices and stir until the sugar dissolves. Add the rum and about 1 cup of ice cubes, cap the shaker, and shake for 30 seconds. Strain the mixture into two collins glasses filled with ice cubes. Top each glass with club soda and top with a dash of bitters. Stir and garnish with a small mint sprig and a segment of grapefruit.
