Garlic Mashed Potatoes and Celery Root

Garlic mashed potatoes are great, but when celery root joins the party, they’re exquisite!

SERVINGS

Serves 4

INGREDIENTS

1 pound red potatoes, peeled and quartered

5 cloves garlic, peeled

1 whole celery root (roughly, about 11/2 pounds), trimmed and quartered

2 tablespoons unsalted butter

1/2 teaspoon kosher salt

4 grinds of black pepper

1/2 cup warm whole milk

Paprika

 PREPARATION

1.    Bring a large pot of water to a boil, add the potatoes, garlic, and celery root. Reduce heat to medium and cook until the potatoes and celery root are very soft, about 30 minutes.

2.    Pour off the water, returning any ingredients to the pot. Add the butter, salt, pepper, and milk and mash together with a potato masher. If too thick, add a splash more milk and mash again. Transfer to a serving bowl and lightly dust the top with paprika. Serve immediately.
