Cashew sauce

This easy-to-make sauce is perfect for enhancing stir-fried tofu or grains such as rice or barley.

SERVINGS

Makes 11/2 cups

INGREDIENTS

1/2 cup raw cashews

2 cloves garlic

1/4 medium onion, chopped coarsely

1 tablespoon arrowroot powder

1 tablespoon tamari

PREPARATION

Place the cashews, garlic, onion, arrowroot, and 1 cup of water in a blender and blend until smooth. Pour into a small saucepan and add the tamari. Place the pan over medium heat and stir until it thickens, about 5 minutes. Be careful not to overcook, as it thickens further as it cools.
