Carrot-Juice Salad Dressing

The creamy sweetness of carrots makes them useful for salad dressing. If your carrots are organic and very fresh, you might tear up some of the foliage to add to the salad. This dressing is creamy, yet bursting with sweet-sour-spicy flavor.

SERVINGS

Makes about 1 cup, enough for 4 or 5 salads

INGREDIENTS

1/2 cup fresh carrot juice (from 1 or 2 carrots)

1/4 cup heavy cream

4 tablespoons tahini

1 tablespoon rice vinegar

1 tablespoon sugar

4 teaspoons Dijon mustard

1/4 cup canola oil

1/4 teaspoon sea salt

PREPARATION

Place all the ingredients in the blender and whiz until smooth.
