Broccoli In Excelsis

This treatment really exalts the flavor of broccoli. If anyone in your family thinks he or she doesn’t like broccoli, this recipe will change their mind.

SERVINGS

Serves 4

INGREDIENTS

4 anchovy fillets

2 tablespoons olive oil

3 cloves garlic, sliced thin

Juice of 1 lemon

1 head broccoli, reduced to florets

PREPARATION

1.    Place the anchovy fillets in a small, cold skillet and slowly heat over low heat. As the pan warms, you’ll be able to mash the anchovies with a fork—they’ll actually dissolve. Don’t let them sizzle or cook. Just delicately melt them. As soon as they’ve melted, set the pan aside.

2.    In a separate pan, heat olive oil to just shy of the smoking point and add the garlic. Stir until the slices turn a light brown. Remove the pan from the heat and, using a fork, take the garlic slices out of the pan and drain them on paper towels.

3.    Transfer the melted anchovies to a small bowl and add 1 tablespoon of the garlic oil and the lemon juice. Stir it until mixed.

4.    Steam the broccoli over boiling water until just tender—no more than 5 minutes—and turn into a warmed bowl. Sprinkle with the fried garlic slices, then spoon over the anchovy-oil-lemon juice.
