Brazil Nut Bark
By Jeff Cox

About the only time most of us have chocolate bark is when we buy it at the chocolate shop, but it’s easy to make at home. The chocolate must be melted in a double boiler or it will scorch.

SERVINGS

Makes about 1 pound

INGREDIENTS

12 ounces semisweet chocolate

1 tablespoon butter

1 cup chopped Brazil nuts

1/2 cup seedless raisins

Melt the chocolate with the butter in the top of a double boiler, keeping the water beneath at a simmer. When melted, remove from the heat, stir in the Brazil nuts and raisins and spread in a thin layer on a cookie sheet lined with wax paper. Place in the refrigerator until cold and firm. Break into pieces and store in the fridge in a tightly covered container.
