Barbecued Tempeh
By Jeff Cox

Tempeh is a very nutritious soy product made by the predigestion of soybeans by a beneficial mold. If you’ve never tried tempeh, this barbecued version is an excellent, delicious introduction. Most of the flavor comes from the barbecue sauce.

SERVINGS

Serves 4

INGREDIENTS

1 pound tempeh

2 cups barbecue sauce

PREPARATION

1.    Cut the tempeh into 4 equal chunks. Put these in a steamer, cover, and steam over boiling water for 15 minutes. Place the steamed tempeh pieces in a bowl and cover with the barbecue sauce. Marinate in the fridge for 1 hour.

2.    While the tempeh is marinating, start a fire in the outdoor grill so that the coals will be ash gray and the heat moderate when the tempeh is ready to cook. Or turn your gas grill to medium hot. Place the tempeh on the grill and brush on some of the barbecue sauce. Turn frequently and cook thoroughly until heated through and the barbecue sauce is baked on.
