To Peel or Not to Peel

THE SKINS AND PEELS of certain fruits and vegetables contain a wealth of nutrients, but when conventionally grown, they also tend to hold the most concentrated amounts of pesticides. That’s why we’re accustomed to peeling produce such as carrots. But with organic produce, you can go ahead and leave the carrot skin on—just give it a good washing.

Here is a list of fruits and vegetables that don’t have to be peeled, even when eaten raw, as long as they’re organic.

Citrus (zest)

Nectarine

Peach

Pear

Plum

VEGETABLES

Carrot

Kohlrabi

Parsnip

Potatoes
