Pepino
By Jeff Cox

SOLANUM MURICATUM

THE WORD pepino is Spanish for cucumber, but pepinos are not cucumbers but rather melon-like fruits. They are so named because they resemble a cucumber in shape.

The pepino is native to the Andean foothills of Peru and Chile. It has a mild melon flavor, a juicy sweetness, and a pleasing fragrance. The flesh is soft and creamy white. It mixes well with more highly flavored fruits in a fruit salad or macédoine. The size of a pepino can range from that of a plum to a papaya, and their golden skin is streaked with violet.

Pepinos are ripe when their background color turns to a deep gold, they become fragrant, and they yield slightly to thumb pressure. They’re usually peeled and eaten out of hand or served like fresh melon, splashed with a little lime juic
