One way to market organic milk is to do what the Horizon company has done: Create large dairies in several places in the country and move the milk to stores from there. It uses ultrapasteurization to prolong shelf life, but that destroys enzymes and “cooks” the milk. But another way is to do what Organic Valley has done: Form a co-op of 420 family farms in seventeen states that produce certified organic milk, cheese, butter, spreads, creams, eggs, produce, juice, and meats. The products are sold locally. The farmers in the co-op benefit from the overall marketing effort and publicity that the Organic Valley brand generates.
