New Green Cuisine
New green cuisine refers to a current environmentally-focused food movement. New green cuisine encompasses many food concepts, drawing on principles of organic, local, artisanal, environmentally sound, and slow food. The movement focuses on seasonal, healthy choices for consumers that come from sustainable small farms and have as little environmental impact as possible.

Many restaurants today serve new green cuisine, focusing on local and seasonally appropriate menus. Though there is no strict definition for new green cuisine, consider implementing it in your own home—buy locally and seasonally—and look for restaurants that do as well. Try a week with no processed foods, or maybe cook a meal for friends with only ingredients from a farmers’ market. Also, remember that your garden or backyard is the best place to grow your own new green cuisine.
