Fresh Apple Overload

My husband and I recently went apple picking in December and returned home with a large bounty of fresh apples. Now I'm afraid we have too much, and don't want them to spoil or go to waste. We've given some to friends and coworkers, but still have a fairly large amount left.

Does anyone have any ideas for recipes that call for large quantities of apples?
Any recipes for homemade pies or applesauce would be greatly appreciated ;)

Also, apple sauce is real simple. Just peel, core, and chop your apples - add water (about a cup per 4 apples), white sugar (about 1/4 cup), and some cinnamon to taste.

Put the apples, water, sugar, and cinnamon in a saucepan and cook over some medium heat for about 20 minutes (until the apples are soft). Let it cool, then mash away for some nice apple sauce.
