Making the Turkey Last

You may be looking at all the leftovers from your Christmas and wondering what the heck to do.  Well, do what I’ve always done and enjoy every last bit of dinner.

After removing most of the turkey meat and enjoying turkey sandwiches (cold, or with hot left-over gravy poured over it), try this recipe for a delicious and nourishing turkey soup:

1. Cover the turkey with water in large pot,.

2. Add 1 large cooking onion, chopped. Add 3 celery stalks including leaves,
chopped. Season with 2 bay leaves (optional).

3. Bring to a boil, and simmer on low heat until the meat has dropped
off the bones (approx. 2 hrs.). Remove and discard bones.

4. Add left-over mashed potatoes, turnip, peas and other cooked vegetables
from your feast. Also add any remaining gravy and stuffing. The more the merrier.

5. Season to taste. Salt, black pepper, parsley, thyme, sage.

6. Continue to simmer, and add more water if necessary. Don’t be afraid to improvise, that’s the fun of cooking!
